The Elder Tree is run by Tom Rookes. A chef born and bred in the North East with many years of experience cooking at a Michelin starred level at Restaurant Pine and Restaurant Portland as well as privately in luxury chalets in the French Alps.
Tom focusses on foraging and cooking ingredients from around the North-East. As much as possible is grown in the kitchen garden or sourced from the best farms from around the UK. Any animals products used are exclusively of higher welfare and sustainably acquired.
Tom seeks to give each guest and unforgettable experience while presenting your local area in a way you may not have seen before.
